1 large watermelon
250ml lemon juice
100g caster sugar
1 litre soda water
1 lime, sliced
Cut the top off the watermelon and hollow it out, removing any pips as you go.
Push the flesh through a sieve into a bowl.
Blend the flesh with the lemon juice and sugar to make a purée.
Stir in the soda
Put ice in the hollowed out watermelon shell.
Fill it with the lemonade mixture.
Serve the rest in a jug with slices of lime, fresh mint and ice.

1 small lime, sliced
a handful of fish mint leaves
10 (ish) slices of cucumber🥒
Place all the ingredients into a large glass jug and fill with either tap, still or sparkling water. Leave in the fridge for 15 minutes before serving for the flavours to develop.
