Cheesy oat biscuits

Oh my! I didn't expect to be saying this! 💥 I've given up chocolate, cake and biscuits...and I just love chocolate.

And I decided I wanted to look after my body better. So I have been walking twice a week for the last few weeks and this week I'm reducing the amount of sugar I eat.

So I was going to do a shortbread recipe this week and now I've changed it for these great cheesy oat biscuits. They make a great savoury snack.

Makes 16

INGREDIENTS

150g oatmeal (porridge oats)
50g plain flour, plus extra
50g unsalted butter, softened and cut into cubes
a pinch of salt
60g cheddar cheese, grated
a pinch of cayenne pepper
85ml cold water

METHOD


Heat the oven to 180°C/160°C fan/gas 4.

Put the oatmeal, flour and butter in a bowl.

Rub the butter together until all the butter is combined with the flour and oatmeal.

Then add the salt, cheddar cheese, cayenne and cold water.

Mix with a spoon and the knead into a dough.

Make the dough into a ball, wrap in cling film and chill in the fridge for 30 minutes.

Lightly flour the work surface and roll out the dough thinly.

Cut the biscuits with a cutter and place on a baking sheet lined with non-stick baking paper.

Bake for 18 minutes until pale and golden.

Cool on a wire rack. 

Eat straight away or store in an airtight container until needed.
