Curried Parsnip Soup

I love soup for lunch, it's a great way of getting all that vegetable goodness into your diet. As well as warming you from the inside out on a cold day! This is my Mum's recipe and my favourite.

Curried Parnsip Soup on a red star tea towel

Serves 4-6

INGREDIENTS

40g unsalted butter
2 medium parsnips
1 medium onion
1 clove of garlic, crushed
1 tablespoon of plain flour
1 rounded teaspoon of medium curry powder
800ml of vegetable stock
150ml cream (of your choice, I use Oat milk)
Freshly chopped chives
Salt and pepper to season

 

METHOD

1- Peel and chop the onion, parsnips.

2- Melt the butter into a heavy based saucepan and then add the parsnips, onion and crushed garlic.

3- Stir so everything is coated in the lovely butter and cook for 10 minutes slowly, with the lid on.

4-After 10 minutes, lift off the lid and add the flour and the curry powder. Give everything a good stir, so the flour and curry powder soak uup all the butter and cooking juices.

5- Gradually add the vegetable stock, stirring as you go.

6-Simmer for about 10 minutes until the parsnip is tender.

7-Liquidise the soup. Add the cream and season with salt and pepper.

8- Bring to the boil and taste.

9- Serve with a little extra drizzle of cream and sprinkle on some freshly chopped chives.

Great served with a crusty roll or garlic bread. Enjoy!
