Delicious health breakfast recipes

Eating a good healthy breakfast will set you up for the day. The simple act of eating well will increase your energy levels, increase your sense of well-being and help you maintain a healthy weight.

Blueberry Breakfast Muffins

Makes 6

Ingredients

1 large egg
75ml pot natural low-fat yogurt
25ml rapeseed oil
50g apple sauce or pureed apples (find with the baby food)
1/2 ripe banana, mashed
2 tbsp clear honey
1/2 tsp vanilla extract
100g wholemeal flour
25g rolled oats, plus extra for sprinkling
3/4 tsp baking powder
3/4 tsp bicarbonate of soda
3/4 tsp cinnamon
50g blueberry
1 tbsp mixed seed (pumpkin, sunflower and flaxseed)

Method

Heat oven to 180C/160C fan/gas 4.
Line a 6-hole muffin tin with 6 large muffin cases.
Mix the egg, yogurt, oil, apple sauce, banana, honey & vanilla together in a
jug. Place the remaining ingredients, except the seeds, into a large bowl, add
a pinch of salt and mix to combine.
Pour the wet ingredients into the dry and mix briefly until you have a smooth
batter. Don’t over mix as this will make the muffins heavy.
Divide the batter between the cases. Sprinkle the muffins with the extra oats
and the seeds.
Bake for 25-30 mins until golden and well risen (and a skewer inserted into the
centre of a muffin comes out clean). Remove from the oven, place on a wire
rack and leave to cool.
Can be stored in a sealed container for up to 3 days.

Golden Milk

Ingredients

1 cup of Oat Milk or Almond milk (unsweetened)
1 tsp of vanilla essence
1/2 tsp ground turmeric
1/2 tsp ground ginger
1 twist of ground black pepper
1/2 tsp ground cinnamon
1 tbsp maple syrup

Method

Warm all the ingredients in a saucepan over a low heat and whisk well.
Can be drunk warm or over ice on a hot day!
Golden milk, originated from India, and believed to be good for the immune
system, coughs, colds and sore throats.

 

My top tip, keep any changes simple and small and you are much more likely to stick to them, whatever they are!
