Humus and raw veggies makes a great tasty and easy lunch! Great for a picnic, pack lunch or healthy snack.
INGREDIENTS
1 x 400g tin of chickpeas
1 small clove of garlic, peeled
1 tablespoon tahini
A squeeze of lemon juice
Olive oil
A pinch of sea salt
METHOD
Rinse the chickpeas in cold running water and place in your blender.
Add the garlic, tahini, olive oil, a pinch of sea salt and a squeeze of lemon juice.
Blend together so it's nice and smooth. Scrape the side, blend again and taste. Add a splash of water if it needs it or a touch more lemon juice.
Serve in a bowl with raw vegetables, carrots, cucumber, peppers and cauliflower. Crackers and flat breads are also great to dip!
