I know it might seem a bit old fashioned but I love a good Prawn & Avocado Salad. Having beautiful fresh prawns, go so well with the avocado and then the zesty seafood sauce... yum!
Make in under 30 minutes
1 Crisp Little Gem Lettuce (I used 1/2 a Little Gem Lettuce and 1/2 a Red mini Cos Lettuce) 6 large cherry tomatoes 1 Avocado, ripe and ready to eat 2 Spring Onions 250 g Cooked Prawns Zesty Seafood Sauce- recipeHERE Lemon wedges to serve
Shred the lettuce into each bowl.
Cut the cherry tomatoes into quarters and add to the bowls along with the chunks of avocado. (Watch the video to see how to easy cut the avocado into chunks)
Scatter the prawns over the top and add the finely sliced spring onion.
Add the zesty seafood sauce and finish off with a wedge of lemon.
