Anything Goes Pasta Bake- with no pasta!

This is a great recipe that can be made with anything you have in the cupboard!

Below I've given my preferred ingredients option.

You can use any vegetables, leftovers, ham, bacon, chicken, meat, pasta and or potatoes. Just cook everything first, with lots of seasoning and place in the baking tray with the cheese sauce on top.

 Ingredients

  • 3 leeks- sliced into rings - or 1 onion
  • 1/2 a cauliflower-cut into florets
  • 1/2 a head of broccoli-cut into florets
  •  3 slices of ham- cut into pieces
  • 200g pasta or 3 medium potatoes cut into chunks
  • butter or oil

For the cheese sauce

Fry the leeks or onion in a frying pan in butter until really soft. Season well with salt and pepper. Put into baking dish. Boil the cauliflower, broccoli, pasta and potatoes ( or any vegetables) until it's almost cooked. (It will continue to cook when in the oven). Add the cook vegetables to the baking dish and add the ham too, or any cooked meat.

To make the cheese sauce

Put the milk, plain flour, butter and seasoning in a saucepan, over a medium heat and whisk continuously until the sauce starts to simmer and thickens. Then lower the heat and cook gently for 5 minutes. Add the cheddar and parmesan, stir until melted into the sauce.

(If you do get lumps, you can put the sauce through a sieve)

Pour the sauce over the vegetables and meat in the baking dish. Grate extra cheese on top.

Cook in the oven on the middle shelf for 40 mins at 200C, gas mark 6, 400F. It will then be bubbling and golden brown.
